Our founder, Enrico Fama has over thirty years experience in pizza. Accademia Pizzaioli has more than 140 pizza schools all over the world. Within one year of taking the course, more than 90% of our students have found work or started their own business!
Accademia Pizzaioli was founded with the objective of offering a training method to all who wish to learn the art of pizza. To those who are already pizza makers, Accademia Pizzaioli offers specialized courses for learning new styles and techniques.

Master Pizza Chef & Acrobatic Pizza World Champion Massimiliano Stammerra’s family opened the first restaurant, named Capri, in 1991 in a small town known by the name of Racale, in the south of Italy.
In 2005, Massimiliano, with his new intriguing and adventurous style of cooking, started his own venue in Gallipoli, a beautiful city in the province of Lecce, Salento, Italy.
After years, specializing in his unique style, in 2018 he moved in Miami Beach, opening the new restaurant and pizzeria Capri New Style Miami.
He also opened the very successful Ristorante Pizzeria Gioia Eat also used as location for the Accademia Pizzaioli’s Classes.

Our location offer courses with qualified professional pizza maker. We guarantee international certificates upon completion of the course and we provide our students with the tools and techniques to start this new adventure int he world of pizza.
The basic pizza course lasts 30 hours (6 hours a day Monday-Friday), and will allow you to start working professionally immediately. We provide a t-shirt, hat, apron, work bag, notepad, pen and manual. No prior experience is necessary.
There are no secrets in preparing a good pizza, but it is necessary to know the basic ingredients: flour, water, yeast, oil, salt. Throughout the course, you will learn more about wheat and flour including its production and refining.
The practical portion of training is carried out in fully equipped workshops or pizzerias. Students will practice different methods of making, rolling, stretching, topping, and baking dough.
Every class has a combination of theory and practice as understanding the materials is integral to using them correctly.
All our pizza courses to become a pizza maker are limited to ensure that the instructor can successfully help each student.
