Advanced Classes

This classes are tailored to people who already know how to make traditional Italian style pizza and are already professional pizza makers, or for thos who have already successfully completed the BASIC PIZZA MAKER COURSE.

All classes have a duration of 18 hours, Monday to Wednesday from 8am to 2pm with the exception of the Freestyle Class requiring a minimum starter class of 30 hours.

Classes details

Advanced Class

You will learn how to make a better pizza dough using both direct and indirect methods, how to handle and stretch the dough, advanced methods to top the pizza and how to better bake it in wood fired oven.

Gluten Free and Keto Pizza

You will learn how to make and bake dough using gluten free flour and different keto flours.

Pizza Napoletana

You will learn how to make Neapolitan pizza, using the best Neapolitan toppings, fried Neapolitan Pizza and advanced baking in wood fired oven.

Pizza In Pala

Called also Pizza al metro. You will learn how to master this speciality.

Pizza in Teglia

Perfect for sliced pizza makers. You will learn how to master this speciality.

Freestyle Pizza

The acrobatic pizza chef, also called freestyler pizza chef, is a pizza chef – that is a pizza packer – and, at the same time, a sort of acrobat, dancer and juggler, original and unusual figure of entertainer within the world of entertainment and catering

The acrobatic pizza maker relies on the proven gestures developed in daily activity to manipulate the dough of water, flour and yeast of the pizza that he spreads by spinning it in the air with articulated evolutions, precisely, on elegant acrobatic choreographies.

This Class starts with 30 hours basic course.
